Inoue Sake Brewery in Hita City, Oita Prefecture.
It is a rare sake brewery that has been passed down by three generations of women. Therefore, this bottle was brewed with great care in a very small production of only 200 kilograms.
It has a strong acidity but also a depth of umami flavor and a richness that I have never tasted before... It is an interesting sake 🤔.
I had it on the rocks and it is very fresh.
