I think the name was probably designed to go with Western food, but it went perfectly with the Thai poelee, ratatouille, and pumpkin salad. It has a gorgeous fragrance like flower honey and a strong flavor that can't be overpowered by Western food (on the other hand, Japanese food didn't go well with it at all because the sake's character was too strong). I don't know the specs, but it seems to be close to the taste of sake made with flower yeast.
