Iyo Kagiya, a sake from Ehime, this is a freshly squeezed, unpasteurized sake, but it remained at the sake shop until August. It is rare.
It tasted fruity and fresh, as it is a nama sake. It is a very good sake with a bit of rice flavor. I think it tasted a little apple-like.
I think it had probably been aged in the refrigerator for half a year, so the umami might have been a little stronger. But it was easy to drink.
