What is fresh sake?
Normal sake is fired twice, once before storage and once just before shipping.
Sake that is never fired is called nama-shu, sake that is fired only once before storage is called nama-packing, and sake that is fired before shipping is called nama-storage.
Like nama-shu, it has a fresh and crisp flavor, but the acidity is relatively lower and the taste is mellower than that of nama-shu. Because it is stored after the fermentation process has been stopped by hi-ire, the quality of the sake is more stable than that of nama-zake.
