What happens when you use ❤️ to brew a sake that is the polar opposite of the two opposites of each other❓
It's kind of exciting!
The aroma is surprisingly subdued.
I can't find a suitable metaphor for it 💦.
On the palate, sweetness, acidity, bitterness, and umami spread out in a gradation in the world of commas, in that order, and then dry up.
Each of the four tastes has its own presence, but they don't assert themselves too much, and are well harmonized.
It is a well-balanced wine without the "haggling" that is typical of Aizan, but this is also possible. ❗️
It is a beautiful sake with a taste that makes you think so.
