Acquired through Sakenomy's lottery sale, as I was unable to purchase the sake brewery's limited release unfiltered unpasteurized sake that went on sale in March. Shinshu Kamerei is really hard to find.
Shinshu Kamerei is rarely sold in restaurants, so most people have never had it. It may be more rare than Jyushidai. It is a real waste of time and I would like all sake lovers to try it!
Sake that is a cut above the rest.
It is made from 50% polished "Yamae-Nishiki" sake rice, which was just developed in Nagano Prefecture. It has a high degree of perfection as a food sake. It really has a great fruity mellowness of rice flavor and sweetness. No other sake has this lingering taste. Because it is fire-aged, the gasiness and acidity are suppressed.
3,850 yen including tax. If you include shipping charges, the price is close to 5,000 yen, but since we don't know when the next Shinshu Kamerei will be available, it is unavoidable.
Personally, I would have liked to try the unfiltered, unfiltered, raw sake, which has more gas and freshness.
