I have always found it difficult to find sake that goes well with meat dishes, and then I found Hagi no Dew's concept sake.
It is slightly carbonated, has a citrusy acidity, and a richness that is typical of sake. I guess you could say that it drains away the grease from meat and makes for a refreshing drink. Today I paired it with dumplings and it was a perfect match.
