Hanaboe has an image of strong acidity. I imagined that a Yamahai Junmai with the flavor of Yoshino cedar would be peculiar and difficult to drink, but the cedar aroma is slight, and the robust rice flavor has a ripe apple-like flavor. The acidity is strong, but the mouthfeel is robust and satisfying. It is a delicious sake that will change your image of Hanaboe. It goes well with vinegared myoga and wakabu. The sweet and sourness increases when heated, and both the aroma and taste are very pleasing.
