Polishing ratio 50%, alcohol content 15%. The aroma of the gorgeous and refreshing CEL24 yeast is rising in the air. As one would expect from CEL24 yeast. It has a pleasant aroma. This is my first Kaygetsu, and it is easy to drink and delicious. I would like to try other sake as well. The label says, "This Junmai Daiginjo Salmon is made from 100% Gin-no-Yume or Yamadanishiki rice suitable for sake brewing and carefully brewed with Kochi Prefecture yeast CEL24 in a blessed natural environment. It is a beautiful and gorgeous sake that has been carefully brewed.
