Otter is a junmai daiginjo sake produced by Asahi Shuzo in Yamaguchi Prefecture using only Yamada Nishiki.
The company's flagship product, "Polishing 20%" (77% of the rice is cut), will be released in the summer of 2022.
In the summer of 2022, "Mirai e Nouka Tomoni" (With Farmers to the Future), a sake with a rice polishing ratio of 8%, will be born, surpassing the 23% polishing ratio (77% of the rice is cut) of the core product, "Polishing 20% to 33%".
