This is a rare Niimasa Viridian directly pumped at the sake shop of the distributor to which I went back to my hometown. It is made with a pure rice brewing method using the No. 6 yeast. Polishing ratio 50%.
This is my first time to drink Shinmasa, but it is just delicious 🤤.
Maybe my nose is weak, but I didn't really recognize the aroma before drinking it as citrus jam like the description says.
When I drink it, a fruity sweetness like melon comes first and this is the best. In the middle, a citrusy astringency comes through the micro-firing, and this gives it a clean aftertaste, and who wouldn't love this?
The label said it should be refrigerated and aged for 3-5 years, but I couldn't resist 😭.
It tastes like a slightly less sweet version of Masumi's "Tsukikoshi" with an added citrus astringency, and it's hard to say which is better.
