The best sake in Okayama is Gozenshu from Coco Tsuji Honten. ☺️
This brewery brews all of their sake with Omachi, the sake rice that originated in Okayama, and uses the Bodeshime method of brewing.
The head brewer is Maiko Tsuji, who has taken over the brewery. She is a female toji 🤗.
Recently, there are many female toji at breweries all over the country 🤩.
The taste is sweet with a hint of aroma and a lactic acidity that is typical of Bodaihashi ‼️
It tastes like yogurt?
When I put it in my mouth, I could feel the sweetness, the rich flavor typical of Omachi, and the fizzy feeling of petit gas filling my mouth 😋.
