吉報シモサ
This sake is made with rice from Nara Prefecture. With a rice polishing ratio of 65%, I thought it might have a lot of miscellaneous tastes, but it has a great fizziness, not to say it is slightly carbonated. The spiciness and bitterness are well counteracted by the sake. As time goes by, the umami and sweetness become easier to detect, so I felt it was easy to drink like a sparkling wine. I would like to try some of the sweeter ones, as there are many varieties.
