＜Sour, delicious, refreshing and easy to drink matured sake.
Although the production date is April 2022, this is an aged sake made in 2020.
The aroma is a refreshing lactic acidity and a hint of rice flavor. It does not give off a sense of maturity.
The mouthfeel is also lactic acid and umami. The acidity and umami are both firm, yet gentle. The sweetness is subtle and subdued, but it brings the whole thing together. There is a sense of unity. And even though it is aged, it is clean and fresh.
