The mouthfeel is full of freshness from the acidity, with a mild sweetness that follows.
Tonight's sake was paired with Japanese dishes such as squid tempura, sasami tempura, vegetable tempura, scallop sashimi, and yuba (bean curd) tofu.
No matter which sake I paired it with, the sweetness and fat content of the dishes were lightly combined, making it the perfect pairing for a mid-meal drink.
However, we had apples as after-dinner fruit, which did not go well with this sake.
