酔生夢死
The "Hoshi" in the name comes from the name of "Kanbashi Fujita," a contract farmer of sake rice used by the brewer, Kobayashi Shuzo. All of the rice used in Junmai Ginjo Hoshi is organic and completely pesticide-free Osanishiki grown by Mr. Hoshi Fujita.
The name "Houou Mita" comes from the brewery's location in the village of Mita, which is blessed with abundant underground water from the Nikko Mountain Range and is a source of high quality rice.
The brewery uses either the "funa-shibori" or "shizuku-shibori" method of pressing.
