I assumed that the new sake was a draft sake... and after taking a sip, I realized that it was.
I regretted my lack of attention as I thought I had chosen the raw sake after wondering about the other fire-aged sake.
I could taste the astringency behind the aroma and quite a bit of sweetness (-5 when I checked later).
I felt it was a little unbalanced when heated, but when cooled, it became soft and refreshing.
I have been alternating between warmed and cold sake ever since.
