We use Yamada Nishiki rice.
Ise-Man is more familiar with the shochu varieties "Kōnen" and "Stella".
It's a neat and sharp taste that is typical of Daiginjo.
The sweetness is moderate, but it is not too dry.
It has a strong acidity, so it has a lot of depth.
It's perfect for sushi or sashimi of white fish.
There's still a lot of good sake in Mie!
