This is Sengoku's Sanshiki, a sparkling sake. The bubbles are so strong that even after opening the bottle, the bubbles are overflowing. The first thing you taste on the palate is the fizziness, then the acidity, and then the spicy umami. It is not too sweet, but has a nice sharpness combined with a pleasant acidity. It is quite tasty. Yamada-Nishiki, nama-hashiro, unfiltered, unpasteurized sake, about 2,200 yen, Otsuka Sake Brewery, Honmachi, Tokyo.
