We were served a special one at our favorite restaurant (*^-^)
They say it's a special distribution sake.
It's clean and gorgeous, but it's very delicate and I don't know how to describe it, but it's difficult to describe with my vocabulary. It's delicious.
This is a junmai sake, but it's called flat rice polishing, a technique that cleverly removes the protein from the rice, making it taste like a ginjo sake.
There's all kinds of technology out there!
