Junmai Ginjo sake with a 55% rice polishing ratio According to my research, this sake brewery was established in Higashikawa-cho, Kamikawa-gun, Hokkaido as a "public-private" sake brewery, which is rare in Japan. A long-awaited sake brewery has been established in Higashikawa, and I want to make my first sake with Higashikawa-grown rice! A group of like-minded volunteers from JA Higashikawa took on the challenge of growing sake rice in the name of "Higashikawa, the rice-producing region. Two types of sake rice, "Comet" and "Kitashizuku", were made and brewed just for Sanzen櫻. When poured into a glass, it has a stronger and more gorgeous ginjo aroma than sake brewed with Kitashizuku. The first sensation when drinking it is a fruity and strong sweetness. The aftertaste is a refreshing sour sweetness. Personally, I think Comet is definitely better than Kitashizuku.
