It is a Junmai Ginjo with a noble and honest taste without seeking for showiness.
Watanabe Shuzo, the brewer of "Horai" which has won many awards such as the Grand Prix in 5 consecutive national sake competitions, is very particular about the raw materials and brewing techniques, and has created a Junmai Ginjo sake "Ieden Tezukuri Junmai Ginjo" which conveys the flavor of the rice.
The rice used is Hidahomare, a rice suitable for sake brewing produced in Gifu Prefecture, refined to 55% and made in small quantities for ginjo-zukuri.
It has a soft and smooth mouthfeel, with a gentle fruity aroma that spreads gently, and a deep, rich flavor along with the umami and sweetness of the rice.
The yeast used to brew the sake is a low-temperature, long-term type of yeast for ginjo-shu, which has low acidity.
This is the brewer's pride and joy, and can be enjoyed from cold to warmed sake.
