It has a subtle yogurt-like aroma.
It has the acidity typical of Yamahai, but it is not so bold and gentle. The acidity in the aftertaste gives it a characteristic tightness.
The aftertaste is long.
When heated, it has a very calm taste while still retaining the Yamahai character.
We enjoyed it with nabe dishes.
It is suitable for people who are in the upper middle of the Japanese sake class.
