The first Eiko Fuji. A sake that is reputed to be delicious by all. What is it like?
A cool, refreshing aroma. Comes in clear in the mouth and maintains the same clarity. Then, a gentle melon-like sweetness and aroma, and at the same time, spiciness appears. At the end, it finishes with a slight bitterness while retaining the spiciness.
It was like seeing a fragment of Eiko Fuji's ability. This junmai ginjo has a great design ability to give this clarity and sweetness at the necessary stage. The sweetness comes in the latter half of the bottle, so there is no problem at all if it is matched during the meal. I can only say that it is as good as I expected. I suddenly want to try other grades.
