The last time I came here for a drink (another day after my last post), I slipped in just before closing time and drank a lot with the regulars and the manager, even though I couldn't eat noodles, and I got used to the place.
I did the forbidden move of a drunkard: drinking until morning and then going to visit the restaurant.
I lost my way (I wasn't aiming for that, was I?). I drank until rather late in the morning.
The manager told me today, "It was hard to open for business the next day...well, I'm used to it...".

Yokoyama Junmai Ginjyo Unfiltered Nama Sake
...I don't know what's going on anymore.
The aroma is soft, gentle and fruity on the palate.
Then, there is the astringency of nama-zake and a slight tanginess like blue cheese (the astringent side is the acidity).
The sweetness and subtle umami of junmai rice lurking in the back.
Less sourness on the sour side, which is common in nama-shu.
Is it turned to fruity?
Well, since it is rice, it goes well with seared duck and char siu pork, and the sake goes down smoothly.
I have an early start tomorrow morning, so deep drinking is strictly forbidden.
I will drink moderately, slurp up some noodles, and go home.
