SAMURAIZ
This is the sake from Shirafuji in Wajima that we have been drinking the most.
It is a sake made from Iwate Prefecture's Kame-no-o, a low-purity sake brewed in a "nama-hashiroshi" style.
When poured into a glass, it has a slight color.
In the mouth, it has a soft sweetness that is typical of Shirafuji, with a strong umami. There is a hint of astringency in the aftertaste.
When warmed to human skin, it has a sweetness, but it also has an astringent taste.
When paired with a slightly darker food (iburigakko, cheese, pastrami), the oiliness cancels out the astringency, and it is quite nice.
When the astringency disappears, the sweetness and umami stand out, making it a delicious pairing.
