I took this rare opportunity with my sake-loving relatives. According to the company, 80% of Shinsei is sold to restaurants and 20% to individuals, so it is not easy to get a bottle of it unless you have the Corona disaster.
It is my favorite of the three.
It is clear, transparent, and free of any unwanted flavors. The level is very high. It has the acidity and umami that only Niimasa can provide.
