I am drinking honjozo tonight. I like the yellow label, it somehow goes with yamahai type sake.
The aroma is grainy. Mouthfeel is silky and very light but flavor is rather complicated and deep. There are layers of yogurt, wild earthiness followed by wine like acidity.
As it aproaches room temperature in summer, the flavor gets more compact and solid. I can't wait to try it warm tomorrow.
Not as fragrant as Kameizumi. Gamier.
