I was told that this sake is brewed with non-standard rice and although it is junmai, it cannot be called junmai sake. I heard that it is a limited edition sake available only in about 10 stores in Japan, so I immediately bought it.
When I drank it, I found it to have a strong acidity and an unexpressible umami taste of rice. The umami lingers in the aftertaste. There is no sweetness. Perhaps because it is a Yamahai sake, it has a somewhat strong flavor. It has a strong personality and is very tasty.

Grilled sweetfish with salt
Tsubugai (whelk) sashimi
Grilled pork belly with salt and pepper
Deep-fried chicken cartilage
