かつお
Gohashi is derived from the Kintai Bridge. I only found out about it recently, but it has a much longer history than Ottersai, also from Yamaguchi!
It has a yellowish color and an aroma with a sense of maturity.
When you take a sip, it's sweet! The sweetness comes quickly. It is not the sweetness that is popular these days, but the sweetness of aging. The bitterness is pleasant, and it goes down smoothly. It is different from Ottersai, but I feel the same refreshing feeling.
It's nice to have this flavor at room temperature!
I'll be testing it further after I open it to see how much it changes at room temp 🙌.
