It is in the midst of a typhoon, but I hope everyone is drinking well. Tokyo is much quieter. It is possible that it will be more intense tomorrow morning, but I will probably be drunk in bed.... Tonight I'm going to drink something a little unusual. I am sure many of you know Soumura because it is well-known. The point is, as you can see from the label, it is a sake that has been laid down for a year. It is not intentionally aged, but rather, it was aged to increase the depth of flavor. (Is that too much to ask?) However, the store owner said that they had it in stock because they tasted it and it was delicious, so I think that the result was a good thing. I will eat it with hot pot. I am not sure if I can call it aged, but it has a unique flavor. It is neither too sweet nor too spicy, and has a good balance, but it does have a few quirks. It is easy to drink, yet has a strong presence. I am not sure how to describe this flavor. I feel that the aftertaste is particularly unique. I think I have tasted this sensation with some other sake rather than sake, but hmmm, it is difficult. It's also hard to judge how much of it is the result of a year's standing. Personally, I think it is a delicious sake suitable for autumn. I don't think it comes out very often, so if you see it, please give it a try.
