Satisfaction: ★★★★☆ I was wondering if I would like it because it is similar to Kangiku, and I was curious about Seishuzo. I have had Short-stalked Watabune before, but Shiga Watabune was the first rice I had ever had. When the bottle was opened, it had a fruity aroma, but I think it was weaker than that of Kangiku. It was so fresh that the inside of the sake cup was covered with bubbles. In the mouth, there is a moderate sweetness, followed by a moderate acidity. The flavor is complex and delicious. It is like an Omachi sake. It is the type of sake that can be drunk with gusto. When used as a food sake, it tastes a little bitter, but not so much that it bothers you. It is a delicious sake that has been the talk of the town recently. It certainly has umami and sweetness, and is a little like Kangiku. It is said to be from a different lineage from Short-stalked Boat, but it has a complex flavor like the Omachi lineage, and it never gets old. Koyama Shoten's Sei Shuzo has so many varieties on tap that it is very difficult to choose which one to drink. Of course, I could ask the staff, but even if I don't like it, I want to test my intuition.
