I don't know if it is due to the rice called "reihou" or the sake yeast, but after the fizzy feeling, sourness and bitterness like lemon peel are coming. In the second half, there is a citrus sweetness. I think this is also because the bitterness from the first half is still there. The sensation may be similar to that of sparkling wine. It seems to go well with fish. The atmosphere is sparkling wine, but it is firmly sake. (It has a little heaviness), so it seems to go well with sour southern bluefin tuna, etc.
