The reason why I have been to the Hasegawa Sake Shop so many times recently is because I wanted to get my hands on a bottle of this. I'm going to get a bottle of Shinsei, which I will never be able to get again!
The aroma is not gorgeous, but the sweetness of pear and the tannininess of grapes make it hard to tell that it is from a wooden vat. The water is soft and smooth. The first thing that hits you is a grape-like sweetness and acidity that is more unique than any sake you have ever tasted. Next comes a pear-like sweetness and freshness. After a few moments of comfort, a grapefruit-like bitterness and astringency appear to round out the experience. The way it quietly fades away before you even notice its sharpness is like the petals of cherry blossoms that disappear from the town before you know it.
I will never be able to get a bottle of Shinsei again, as I have no connections to it, and I enjoyed it to the fullest! Thank you for the food and drink tonight!
