I finally opened the bottle.
I can't remember how many years it has been since I drank Niimasa at home.
I happened to be able to purchase it and kept it pretty well, but I couldn't resist.
The color is clear and colorless. It is the first clear colored sake I have had in a long time. The unique aroma comes from the wooden vat. But it is completely different from the old barrel sake.
The grapefruit-like aroma is followed by a sourness, and then a bitterness that complements the sourness. There is not much sweetness, but it must be a hidden supporting role.
I tried it with Margherita, recalling old memories, and it was a great choice.
It is a great choice for both pizza and sake.
It is a very satisfying bottle.
