In this installment of Amami's series on different types of rice, we introduce you to Hiroshima Senbon Nishiki. Senbon-Nishiki is a derivative of Yamada-Nishiki. However, it does not have the flamboyance of Yamada-Nishiki, but rather a more subdued taste, and on the contrary, the rice has a deeper flavor. This calm and deep flavor is a nice marriage to the fizziness that is typical of Amami, and it is very tasty. I also bought a bottle of Choshu Yamadanishiki, so I am looking forward to comparing the two. I feel that the taste of Choshu sake brewery has calmed down a little since Mr. Fujioka left, but it is as good as the others and I would like to continue buying their wines.
