Bizen Omachi is Japan's oldest sake rice produced in Okayama Prefecture.
Omachi is considered to be difficult to cultivate because it stands over 150 centimeters tall, making it prone to collapse and vulnerable to pests and diseases.
At one time it was even called "phantom rice!
There are quite a few sake🍶 made with Omachi, but the amount produced is very small.
