Yukiwakamaru is a new rice variety that was created as the "younger brother" of Tsuyahime, which is also produced in Yamagata Prefecture, and has been on full-scale sale since the fall of 2018.
The name "Yukiwakamaru" was inspired by the masculine appearance of the strong rice and the size of the grains, as well as the whiteness and luster of snow that symbolizes the snow country of Yamagata. The appearance and taste are characterized by the firmness of the grains, their outstanding whiteness and luster, and a new texture that gives them a sense of elasticity.
It cooks well, and each grain stands up well and is chewy. It does not have the sweetness and stickiness of Tsuyahime, but it is very popular among those who prefer chewy rice.
