According to research, the name "Hiroki," which is pronounced "hiroki" by the Hiroki Shuzo brewery, means "a dewdrop of joy (sake) bursting forth". Tobiroki, whose policy is to produce sake that "always tastes the same no matter how many times you drink it," once faced the crisis of going out of business, and the "unfiltered, unpasteurized sake" that triggered its revival became a hot topic along with Tobiroki's popularity. Tobiroki is therefore known as a pioneer in the unfiltered nama sake category.
When poured into a glass, it has a fresh fruity aroma, with a fresh ginjo aroma like muscat. The first impression upon drinking is a perfect balance of umami, sweetness, acidity, and bitterness. The sharpness and bitterness of the aftertaste also make for a pleasant drinking experience. It is also delicious.
