Today's sake is Ganki Yamada-Nishiki, which is a very smooth and full-flavored sake. We started with simmered taro and pumpkin, then fried udo (Japanese udo) with sesame oil, and three kinds of squid, bamboo shoots, and cod sprouts with vinegared miso and sesame paste of kogomi (a kind of seaweed).
