I imagined it would be thick, robust, and mildly sweet like a noble wine because it is a kijoshu, but it was not. It was a delicious sake with a clean sweet and sour taste and a light nigori (light reddish-brown) taste that still had a delicious rice flavor, just like amazake. If it had not been made with kijoshu, the rice flavor would have been less pronounced.
The sake was served in the Fukui area, near the Kuroryu Sake Brewery, which opened up the world of sake for me.
