It's been a while since I've been to Yukino Kayasha. I bought a late hiyaoroshi.
The texture is smooth and fresh, and the umami is juicy. After that, a little acidity and rice-like sweetness and umami spread out and lingered in the mouth for a long time, giving a high sense of happiness.
The perfection of this sake is really high. It is round and round without any corners, and has a perfect umami flavor, yet it is not heavy and can be drunk smoothly.
We will definitely repeat this next year.
