With a pineapple-like aroma, it has a moderate sweetness, a firm umami of rice, and a spiciness of alcohol, and then it finishes with a crisp acidity that leaves the bittersweet umami of rice behind.
It is a sake with a nostalgic impression, just like the sake I tasted at a Buddhist memorial service when I was a child.
It went well with octopus with ponzu sauce and raw lamb jingisukan.
