The third bottle is a little older.
It has already adopted the wooden vat brewing process, but the alcohol content is still 15% (the 2020's is 13%).
The aroma is more of the same melon type, but a bit aged.
Might be a little over-aged.
Still a little carbonation on the palate.
I wonder if the cap design of Niimasa is airtight.
The taste is a little too light to be melon, but it has a very clear sweet flavor and low acidity.
Overall, the taste is very mild.
It's tasty, but compared to the previous two bottles, it seems to have aged a bit too long and become flat.
The recommended aging period is really important to keep in mind.
I'm planning to try the Lapis next month, if I can find the time.
