The third Yonotori Spark draft from this year's hanpukai!
It was released as a stand-in for the Nirvana Kame Kai that failed to brew, so it is not so different from the regular Yonotori Spark.
The only difference between the two is that the normal product is fire-aged and this one is a draft.
The other hanpukai sakes are often recommended to be aged for 10 years, so let's open this regular one first!
The aroma is less sweet and more acidic than the regular Yonotori.
The taste is definitely dry for a Yonotori.
It's not that it's not sweet, but it's less sweet than expected, and the sourness is comparatively sour with the addition of the acidity from the carbonation.
There is also a woody flavor from the wood vat brewing process, which makes the taste quite complex and deep.
The H-types and A-types are usually sweeter and more dangerous than the recent Shinmasa.
I wonder if they made some adjustments to this one for the hanpukai.
It's a slightly different but usually tasty sake that is typical of the Shinmasa hanpukai!
