It's been cold enough that autumn seems to be over before we know it. That's why we are opening a bottle of "Akagisan" in autumn this year, too.
When you open the bottle and pour it, the aroma is like citrus and orange puree.
The palate has a clear lightness that is typical of Akagisan, and a banana-like roundness that spreads out as if it were clinging to the tongue. A refreshing lactic acidity flows through it, and the rice-like umami expands as it does.
It has a little bit of astringency and spiciness that is lightly stimulating and sharp, with a well balanced taste of push and pull ✨.
The flavor of maturity is less pronounced than last year, giving the impression of lightness.
The new sake is finally ready and we can't wait for the release date: ✍️
