FUJIYAMA
Today I had a bottle of Katsukoma Honjozo from the smallest sake brewery in Japan, in Toyama Prefecture.
I used to be able to buy raw sake with the obi dripping from the mouth and it was delicious. 、、、、 Today was the first time I drank a fire-brewed honjozo.
The first time I drank it chilled, the aroma was faintly pale. In the mouth, you can feel a little density, a numbness on the tongue, and a lingering bitterness.
Is it suitable for warming sake? So I tried it at different temperatures in the microwave oven, as I had done before.
Heated to 35 degrees: The aroma is not very strong, but there is a subtle sweet alcohol aroma. When you put it in your mouth, you can taste a slight sweetness. Bitter taste lingers in the mouth.
45° warmed: Not so different from 35°, but the bitterness is not so strong.
50° warmed: The astringency of the 45° flavor is almost imperceptible.
It's a matter of taste, but I prefer it at 45 degrees warmed with a little bit of residual bitterness on the palate. ❤️
