This sake is brewed by Shoichi Sato, a famous master brewer of Sakata Shuzo, using Dewa Sanzana from Yamagata.
This is his first Kamikimoto since be after.
When you open the bottle, the aroma is quiet, with some fruity notes and a hint of rice ginjo. Didn't you recognize the aroma of cherries 🍒 that was written on the price tag when you bought it?

When you put it in your mouth, the solid umami spreads.
The accent of the beautiful acidity and bitterness that covers that umami and the sweetness of the rice firmly.
It has a dry mouthfeel, a deep flavor, and a nice spiciness.
Good sweetness that does not interfere.
Great balance, gentle and not sharp.
It's good sake~, my kind of sake~😆.

After I finished drinking it, I went to buy another bottle and it was still on sale😄.
This sake seems to make even supermarket sushi taste good.
It goes well with sushi, not sashimi.
