It's been a while since I've had a Gobashi sake.
Generally, junmai sake is brewed with 80% rice and 20% koji, but this sake is brewed with 45% rice and 55% koji 🍶.
It has a unique sweet and sour taste that I don't know how to describe ⁉️🤔.
If I had to say, it's like a yeast yeast 🤔.
It has a honey-like color and a tender taste like a matured sake 🤔.
The taste is classic but with a touch of citrus 🤔
It was a strange taste that I have never felt before, but it is a very good sake 😋.
