The sweetness and acidity are well balanced and very clear. The bubbles from the secondary fermentation are fine. It has the impression of a slightly sweeter version of Shinmasa's Tenagara.
The low alcohol content (10°) makes it easy to drink, and you can drink it like a champagne.
